At the end of each year, we are invited to pause, reflect and live unique moments together with our loves ones. Miguel Torres Chile understands that the celebrations of Christmas and New Year are so much more than dates on the calendar: they are moments to connect, share, and toast the dreams that we have built, and those that are to come.

For that, there is nothing better than Estelado Rosé, a sparkling wine full of history, identity, and purpose. Produced from the ancestral grape variety Pais, crafted from País, an heirloom grape cultivated by smallholder farmers in Chile's drylands since the 17th century, this wine embodies the rich flavours of a time-honoured tradition. It reflects the passion and dedication passed down through generations. More than its exceptional quality, it stands as a symbol of fair trade and sustainable practices. Fair Tradesupports local producers and contributes to sustainable development.

Estelado Rosé is a brut prepared using the Traditional Method, which means that it undergoes a second fermentation in the bottle, this sparkling wine delights with its delicate pink hue, fine and persistent bubbles, and aromas of red fruits and citrus. Each toast becomes an unforgettable sensory experience. On the palate, its fresh and vibrant character invites joyful celebrations and pairs beautifully with this delicious recipe: Oysters with Parmesan Cheese recommended by Patrick Rose, executive chef of La Bodeguita Miguel Torres Vitacura.

Ingredients:

  • 200 grams of parmesan cheese
  • 100 cc cream milk
  • 30 grams of butter
  • 20 grams of flour
  • Pinch of salt and pepper
  • Shot of Estelado Rosé

Instructions: Start by grating the Parmesan cheese and setting it aside. Heat the cream in a saucepan until it starts to boil. In a separate pan, melt the butter and mix in the flour until smooth. Gradually add this to the cream, stirring until the mixture thickens. Take it off the heat and stir in the grated cheese until it melts.

Mix everything gently until well blended, then season with salt and pepper. Add the shot of Estelado as the final touch. Arrange the scallops on a baking tray, top them with the cheese mixture, and bake in a preheated oven at 220°C for about 15 minutes. Serve with lemon wedges and a chilled Estelado Rosé, ideally at 9°C.

Sparkling Wine Tour in the “Best Experience for Wine Lovers” (Mejor Experiencia Enoturística) for the Maule Region in 2024.

A tour that includes a visit to the winery, focusing on the production of its renowned sparkling wines. Located in the heart of the Curicó Valley, this family-owned winery offers an experience starting at $16,500, where you’ll learn about winemaking with the traditional champenoise method. You’ll also explore everything from historic and traditional aging techniques to modern innovations. The tastings include: Estelado Roséthe first sparkling rosé from Chile made from Pais; Las Mulas, also made from same variety; bright white in colour, of the Extra Brut category; and Cordillera Extra Brut, a sparkling premium made from 100% Pinot Noir.
