With an average consumption of 2.1 kilos of chocolate per capita per year, Chile is one of the countries in Latin America that consumes the most chocolate, which is why studying the preferences and tastes of consumers is becoming increasingly important in the chocolate and confectionery industry.

Creators in the world of pastry, chocolate and gourmet experiences are a vital part of bringing out new developments and uses for chocolate, which is why Callebaut invited these experts to live a sensory experience with the Five Colours of Chocolate and to experience first-hand the world of Cocoa Indulgence.

"The new chocolate trends have much more to do with people's desires and expectations, it is a universe that encompasses much more than flavours and extends to a world where indulgence plays a major role," said Marcia Olmos, Callebaut's Marketing Manager in Chile.

Top Chocolate Trends 2025

Derived from its "Top Chocolate Trends 2025" study where more than 11,700 consumers around the world were interviewed, Callebaut identified the new ways in which people are consuming chocolate around the world, defining three main guidelines that are combined and blended by all people on a daily basis:

- Healthy Indulgence

- Conscious Indulgence

- Intense Indulgence

The desire for guilt-free pleasure drives the world of chocolate, and 66% of people actively seek to consume something different within these three verticals of indulgence, which are determined by people's relationship with the consumption of chocolate in all its forms and preparations.

By definition, Healthy Indulgence has to do with the current trend of looking for formulas that work with new lifestyles, so in this category, guilt-free pleasure is sought with formulas that are low in fat, functional, made with healthier products and even with productions that are suitable for allergy sufferers or APV.

Conscious Indulgence, on the other hand, refers to the constant quest of people to make choices that have to do with the choice of raw materials.

Knowing the origin

Taking into account where the materials used to make the food come from, whether they are sustainably sourced, or what impact they have on the environment, are just some of the questions that relate to this vertical, with 77% of respondents wishing they had more conscious options to choose from.

In this area Callebaut stands out for its clean labelling, using only the right ingredients to bring to life a high-purity chocolate, which at the same time has less impact on the environment.

Finally, Intense Indulgence has to do with the pleasure of pure and hard chocolate, without guilt, without remorse or consequences. That sensation that is sought to celebrate, as a unique occasion, that pleasure that surpasses everything in the mind and that seeks the purest enjoyment.
