The arrival of autumn and the gradual decrease in temperatures bring about a natural change in our gastronomic preferences.

Fresh summer salads take a back seat, giving way to stews, risottos, slow-cooked meats and roasted root vegetables.

To accompany this mild weather season that is getting colder day by day, Emiliana Organic Vineyards —the world's largest organic vineyard— has selected three of its most internationally awarded wines.

Each of them reflects the purity of its origin and offers the ideal structure for pairing with the deep flavours of autumn.

Coyam: Warmth and maximum expression of organic agriculture

A true emblem of Chilean organic viticulture. This award-winning red blend from the Colchagua Valley It is a wine that shows brilliance and relevance, always maintaining its generosity and structure. The tannins are silky with notes of graphite, very aromatic with fragrances of blackcurrant, violet, eucalyptus and cocoa that invites a pause and enjoyment by the fire.

  • The ideal autumn pairing: It is a wine that calls for dishes with character and long cooking times. It pairs exceptionally well with braised meats, a baked choclo pie, or, in its vegetarian version, with roasted aubergine or root vegetables accompanied by rosemary and thyme.

57 Rocas Cabernet Sauvignon: Structure and elegance for cold days

Recently awarded a Gold Medal at the demanding Global Cabernet Sauvignon Masters competition in London, this exponent of Alto Maipo It seeks elegance over power. It presents itself as juicy, with an aroma marked by red fruits, notes of black tea, and a vibrant acidity that gives it a long and persistent finish.

  • The ideal autumn pairing: Its structure and soft tannins are ideal for the cooler days of the season. Spectacular with ribs in red wine sauce, filled pasta with robust sauces, or juicy roast chicken with figs.

Maycas del Limarí – Pinot Noir: Petrichor in a bottle for cool afternoons

This Pinot Noir is the perfect transition between summer and autumn. Thanks to the coastal influence of the Limarí Valley, it is a wine of great freshness and tension, but with the characteristic note of petrichor – wet earth and the smell of rain – as well as dried roses, pomegranate, figs and wild raspberry that envelops the palate.

  • The ideal autumn pairing: Its vibrant and elegant profile makes it the perfect companion for a wild mushroom risotto, roasted pumpkin creams with a hint of nutmeg, or a classic lentil stew.

“Autumn invites us to uncork wines with more body and presence, which complement the season's gastronomy without losing the juiciness that makes you want to keep drinking. At Emiliana Organic Vineyards, we work organically and regeneratively, which means that above all, we have a commitment to the land: to care for the soil, respect natural cycles, and allow the vineyard to express itself honestly in every glass,” commented Noelia Orts, Chief Winemaker of the Fine Wines Division at Emiliana Organic Vineyards.
